Keto Cauliflower and Cabbage Soup

Ingredients:
  • 1 head of cauliflower, chopped
  • 1/2 head of cabbage, chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tbsp of olive oil
  • Salt and pepper to taste
Instructions:
  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the chopped cauliflower and cabbage to the pot and stir to combine.
  4. Pour in the chicken or vegetable broth and bring the mixture to a boil.
  5. Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the vegetables are soft.
  6. Using an immersion blender or a regular blender, blend the soup until it is smooth.
  7. Add the heavy cream to the soup and stir to combine.
  8. Season the soup with salt and pepper to taste.
